Yikes! Episode 24 is delayed!
A bunch of stuff has happened to prevent me from doing my podcast today. All of it was unexpected. Obie has to go to the vet because his infection is back. We also rearranged our network, and twice I have "lost" what I recorded. I am taking these things as signs to try to record later.
I truly apologize for the delay, and any inconvenience. I am hoping I can get this episode done tonight; if not, then it will absolutely be ready tomorrow.

Don't Heat Your House Up BBQ Potatoes

Poke a few holes in the potatoes, and cook in microwave until cooked. Rub oil and salt on potatoes. Place directly on preheated grill on high. BBQ until grill marks appear and potatoes are crispy, about 10 min or so. Serve with butter and sour cream.

The pattern for my alpaca shawl is called "Governor's Lady" in the pamphlet "Crochet for Tables, No. 202" by The Spool Cotton Company, 1943. Head over to ravelry.com to check out projects made with this pattern!

Pecan Brown Sugar Shortbread
1 c unsalted butter, softened
1/2 c brown sugar, packed
2 1/4 c flour
1/4 tsp salt
1/2 c finely chopped pecans (or so)
In a mixing bowl, cream together butter and brown sugar. Stir in flour and salt. Stir in pecans. Transfer dough to a lightly floured surface, and knead until smooth, about 3 minutes. Pat out to 1/3" thickness and cut into squares, rectangles, triangles, etc. Poke each cookie with a fork (to prevent puffing while baking). Place cookies about 1" apart on an ungreased cookie sheet, and bake at 300F until browned on the bottom and cookies have firmed up (not hard, just until when you touch them lightly they still have a bit of an indent left), about 20-25 min. Don't over bake or they will be dry. Makes about 42.
N.B. This is a recipe to use good quality ingredients in. Fresh flour, fresh nuts and fresh butter does make a big difference! I would suggest using dark brown sugar if you have it for the most flavour, but I regularly use light brown because that is what I normally have in the house, and the flavour is pretty good. These are a "sandy" style shortbread, not the "melt in your mouth kind" that typically uses cornstarch.

That Beefy-Noodley Thing
1 - 1.5 lbs. ground beef (or thinly sliced/cubed/ground pork or chicken)
2 packages ramen noodles (I used Sapporo Ichiban brand, link to amazon.com)
2 - 4 c frozen mixed veggies (or so, I don't measure, just use what you've got)
2 c hot water
additional: onion powder, garlic powder, soy sauce (just a bit), sambal oelek (fresh chili paste) or other hot sauce, or substitute fresh veggies for frozen (pre-sautee if needed, like onion)
In a large non-stick pan, sautee ground beef (or brown if cubed/sliced meat). Add noodles (slightly crushed), soup flavouring packages, veggies and water. Bring to a boil, then cover and simmer for about 5-10 minutes, making sure noodles are moistened and cooking. Add a bit of cornstarch in cold water if too wet, and cook for a couple of minutes. Serve! NB: Try and use a decent brand of noodles. The really cheap ones just don't have good flavour, or stand up to the cooking and get mushy.

2 racks pork back ribs
1/2 c. bottled bbq sauce (this is the most you will need, probably less)
salt and pepper
Two (2) hours prior to cooking, remove ribs from the fridge to bring to room temperature. Preheat oven (or set up barbecue for indirect cooking) to 300F. Rinse and dry ribs, and score silver skin on the back of the ribs (or remove silver skin if able). Rub a small amount of salt and pepper to taste on both sides of the ribs. Place on a foil lined shallow pan (jelly roll pan for oven, a piece of foil for the grill) and place, uncovered, in oven or on cool part of grill. Close grill cover. Bake or grill for 2 hours. Increase heat in oven or grill to 375F. Baste ribs liberally with bbq sauce. Return to oven or grill, and heat until bbq sauce is caramelized and crispy about 12-15 minutes. Remove ribs to a cutting board, and let rest up to 15 minutes. Cut between bones and enjoy!

Recipe: Baked Rainbow Trout with Caramelized Onion
1 rainbow trout, cleaned and cut into two fillets, deboned as able
1 sweet or cooking onion, cut in half and sliced thinly
1 tbsp. brown sugar (or so)
soy sauce (maybe 1 1/2 to 2 tsps, or to taste)
freshly ground black pepper
butter (about 3 tbsps.) softened
Rinse and wipe dry fish. Place in a shallow dish, and sprinkle flesh side of fish with soy sauce. I just added enough to moisten the flesh, but not enough to actually drip off. Add pepper and set aside.
Saute onion in a small amount butter (or oil) until well softened, about 5-10 min. on medium heat. Reduce heat to medium low, add brown sugar and saute until well caramelized, raising heat if needed, about 15 minutes more.
Make a foil package large enough to lay the fish in one layer, as well as wrapping around it. (Use no-stick foil if desired). Rub foil with about 1 tbsp butter, and spread about 1/3 of the onion over it. Lay fish over onion. Dot with about 1 1/2 tsps. butter on each fillet. Spread remaining onion over fish. Bring up edges of foil and seal, leaving room for heat expansion. Place in preheated 375-400F oven on a drip pan (I use a 10 x 15 " jelly roll pan) and bake about 15 minutes, or until fish flakes easily with a fork (just poke a little hole in top of foil to test). Remove from foil and serve with roasted potatoes and a green salad.

Recipe: Baked Rainbow Trout with Caramelized Onion
1 rainbow trout, cleaned and cut into two fillets, deboned as able
1 sweet or cooking onion, cut in half and sliced thinly
1 tbsp. brown sugar (or so)
soy sauce (maybe 1 1/2 to 2 tsps, or to taste)
freshly ground black pepper
butter (about 3 tbsps.) softened
Rinse and wipe dry fish. Place in a shallow dish, and sprinkle flesh side of fish with soy sauce. I just added enough to moisten the flesh, but not enough to actually drip off. Add pepper and set aside.
Saute onion in a small amount butter (or oil) until well softened, about 5-10 min. on medium heat. Reduce heat to medium low, add brown sugar and saute until well caramelized, raising heat if needed, about 15 minutes more.
Make a foil package large enough to lay the fish in one layer, as well as wrapping around it. (Use no-stick foil if desired). Rub foil with about 1 tbsp butter, and spread about 1/3 of the onion over it. Lay fish over onion. Dot with about 1 1/2 tsps. butter on each fillet. Spread remaining onion over fish. Bring up edges of foil and seal, leaving room for heat expansion. Place in preheated 375-400F oven on a drip pan (I use a 10 x 15 " jelly roll pan) and bake about 15 minutes, or until fish flakes easily with a fork (just poke a little hole in top of foil to test). Remove from foil and serve with roasted potatoes and a green salad.

Recipe for Potato Salad and Deviled Eggs
6 med. sized waxy ("new" or "table") potatoes
8 eggs
1 1/2 c Miracle Whip
approx. 2-3 teaspoons yellow mustard
salt and pepper to taste
For the Potato Salad:
Boil potatoes whole, with skin on, until a little past "just" cooked. Chill until cold. Hard boil all eggs. Chill until cold. Peel and chop potatoes in 1" cubes. Sprinkle on salt and pepper to taste. Peel and chop 4 eggs and add to potatoes. On top, add about 1 c. Miracle Whip and about 1 teaspoon mustard. Slightly mix wet ingredients, then fold all together. Taste! If too dry, add more Miracle Whip. If not tangy enough, add more mustard.
For Deviled Eggs:
Peel 4 hard boiled eggs. Slice in half lengthwise. Remove yolks to a small bowl. Place whites on a plate. Mash yolks well with a bit of salt and pepper. Add about 2-3 tablespoons Miracle Whip and about 1/2 teaspoon mustard to mashed yolks. Mix well. Taste! Add more Miracle Whip, mustard or seasonings if needed. Fill whites generously with filling.
Assembly:
Place potato salad in a bowl. Press 8 "divots" into top of salad. Place deviled eggs in divots. Sprinkle with paprika if desired. Cover with plastic wrap and store in fridge. Best if made a few hours to one day before serving.
